Laughter is the best medicine: 5 questions with Nicole Stegenga—GM of Mama Delia, Bordel and Botanico

While working in the hospitality industry has provided Nicole Stegenga with some delicious perks (see below), it’s the people she’s met along the way who have given her the biggest joy. “Throughout the years I have been in the industry, I have met co-workers who turned into friends who turned into family and it’s such a magical thing,” she says. Starting as a server at Bonhomme in January 2021, Nicole quickly proved herself, moving up to assistant general manager and then general manager at Wicker Park’s Mama Delia, Bordel and Botánico. Magic, indeed.

 

What skills does someones need to be successful at your job?

Adaptability. Every day is different, and every interaction is different. Whether it is from bouncing back and forth between the floors of Mama Delia and Bordel, to dealing with all the new Covid rules over the last couple years and helping out in all positions on the floor, being adaptable is a must!

 

Favorite Bonhomme Dishes & Drinks?

Yikes, that is just not fair. Porto’s Fire Roasted Oysters are something that have my mouth watering right now just thinking about them. I also love me a Huevos Rotos Shooter at Mama Delia. It’s the perfect combination of the most scrumptious flavors. As for drinks, the Baby’s First Bourbon at Bordel is delightful and as a mezcal girl I love the Never Trust a Spaniard.

 

What might surprise people about you?

I have an irrational fear of birds. Not. A. Fan.

Perfect day off?

Waking up early (8:30 is early for me), getting some sort of exercise in (either tennis or a Peloton workout), taking the dog to the dog beach or dog park, catching up on all my Bravo shows, drinking some wine and eating some good food.

What’s your superpower?

Being able to find the humor in everything. Even on the most stressful days, I can figure out a way to laugh about it and move on.
